Creating a recipe

To add a recipe to a product, the product must be marked as ‘made’. Once this is done an ingredients tab will appear allowing you to add ingredients.

Note: if you wish to add recipes for non-made products e.g. those you purchase and re-sell, we can configure that during the setup of the system - then the ingredients tab will always be visible.

In the ingredients tab, click the Add New Ingredient button and choose your first ingredient from the list - you can search by product name or code. Most of the time, the ingredient will probably exist already in the system but if it’s a new one, you can scroll to the end of the ingredients list and press Create New Item. Once you’ve named the new ingredient, you may wish to press Edit Details to fill in a code and additional information before coming back to the recipe.

For each ingredient you add to the recipe, you can fill in a quantity. This is typically an amount in grams but can be kg, a percentage or any other measurement so long as it’s consistent throughout the entire recipe. A total will show at the bottom of the screen.

Percentages for ingredients will be calculated automatically and shown as you fill in the amounts. Percentages can optionally be used in calculated ingredients declarations, which are visible in the Spec tab for the product, where you can set a threshold percentage to control when they are included.

QUID

Our ingredient declaration calculations allow you to set a declare % over level, above which the % of the ingredient will show after the ingredient name. Sometimes, however, you may need to show the % for certain ingredients, but not others, independent of inclusion level. For example, if an ingredient is named explicitly in the product description, but it below the declare % over level that you have set.

We have now introduced an override to allow you to do this. You will be able to tick a QUID (Quantitative Ingredient Declaration) box against any ingredient in the recipe for a product and any such ingredients will show their %, regardless.

Order and Notes

The order field allows you to enter an order for the ingredients to appear in on screen. This may affect internal kitchen instructions etc. but will not affect the ingredients declaration, which will list ingredients in decreasing percentage order.

The notes field allows you to enter any internal notes such as processing instructions

Prep Yield

Optionally enter a reduction in amount due to processing e.g. Peeling and grating a carrot may reduce to 80%. For use when generating sample making instructions in Samples Out

Approval

You can optionally choose to link a product to a customer for whom approval is required at the ingredient level. I.e. some customers require that each ingredient is individually approved by them. The customer can be attached in the Item Details tab of the product.

Once that’s done, the Approval column in the ingredients tab will show a warning if any ingredient is not approved for use by that particular customer.

The Ing Supp column lists how many approved suppliers you have for the ingredient, due to your own supplier approval processes, not those of a specific customer as above.

Pence per Kg

Finally, the Pence Per Kg column shows the cost of each ingredient, taking into account the percentage used. A total cost will be displayed at the bottom.

This is calculated from the ‘standard cost (pence per kg)’ entered for each ingredient and also takes into account the ‘product yield (%)’ entered for the end product (not each ingredient). For example boiling a product will reduce the volume of the product due to water loss, affecting the yield.
